The first time I made an ice cream cake with this set for kat was for the middle child’s 8th birthday. It’s hard to believe, but that was 10 years ago! The little boy is now a freshman in college. I’ll spare you my heart-breaking-mother-bear story.

Like most projects I start, I start with the best of intentions, think through all my ingredients and steps, and am very happy (and sometimes surprised) with the amazing result.

But I hate, I absolutely hate preparing the damn masterpiece for its close-ups, the last glamor shots for foodies.
This particular cake is a no-brainer. Warts and all, your guests will find nothing but heavenly dessert in their favorite candy bar.
No fancy decorating skills required for this cake! No mad baking skills required. No fancy equipment or tools required—just a 9-inch springform pan.

Feel free to customize it to your favorite flavors, from your choice of ice cream to the candies and chocolates that decorate the top. An easy cake to make for birthdays or any time you want to scream for ice cream!
1. The crust is made with milk and crushed chocolate Oreos. Combine the milk and 24 Oreo cookies in a food processor, then blend until crumbs form.
2. Coat a 9-inch springform pan with nonstick spray and place each Kit Kat candy upside down on the side of the pan. Try to get the Kit Kats as close together as possible, with the Kit Kat name facing out, on the side of the springform pan. You will need a lot of Kit Kats for this cake, 39 Kit Kats to be exact.

Ice melts between them. Things are messy. A little oil will secure the shape of your ice cream cake.
3. Line the bottom of the pan with parchment paper and press the Oreo mixture evenly. Place in the freezer for 10 minutes.
4. Mix the first flavor of the softened ice cream in its container and press evenly on the Oreo shell. Place in the freezer for 10 minutes.

5. Mix the second flavor of softened ice cream in its container and press evenly on the first layer of ice cream. Place in the freezer for 10 minutes.
6. Remove the frozen whipped cream from the freezer and let it rest for 30 minutes. Spread the whipped topping over the top layer of ice cream
7. Decorate with the remaining Oreos and various chocolate candies. Put the cake back in the freezer and let it rest overnight.

8. Take the cake out of the freezer 10 minutes before serving. Carefully open the springform pan and remove. Use a thin knife or spatula to spread the cake onto the plate.
For this ice cream cake, since I used chocolate and vanilla ice cream, I added all kinds of chocolate on top: M&Ms, mini M&Ms, chocolate chips, rolls, and kisses. M&M’s are pretty and colorful and when I had vanilla and chocolate ice cream for the base of the cake they complimented each other beautifully.
If you are using fruit frosting for the inside of your Kit Kat ice cream cake, then you can top it with candies like gummy bears, nuts, worms, and lollipops. Again, what you like should be the candy you use in this cake.

Ice cream cake is very easy to make because it does not bake. The crust can be crumbled with cookies such as sandwich cookies or waffles. Let your store-bought ice cream soften on the counter for 10-15 minutes. This makes it easy to spread in your spring form. Freeze your cake overnight to harden. Using a springform pan makes it easy to remove the cake for serving.
This ice cream cake can definitely be made without eggs. The Oreo crust is eggless. The ice cream I chose was a mainstream brand and it was also egg free. Kit Kats do not have eggs. And you can easily find chocolate and candies that don’t contain eggs.
If you have leftover ice cream cake, you can easily store it in the freezer. Just wrap it back in plastic wrap or foil and it will keep for up to a month.

I have an extra fun post to share today about my daughter Grace’s 8th birthday party! Two years ago I threw her a fun candy birthday party…it was one of my first blog posts and will always be a special party for me. Every other year we throw “big” parties for our girls (this year we’re celebrating with just one or two friends). Grace is a girl after my own heart and chose “Cake Decorating Party” as her theme this year.
I made a small dessert and snack table for the girls. The chocolate cupcakes in Sweet Polka Dot Treats (from Shop Sweet Lulu) were frosted with vanilla cream cheese frosting (using a large round tip) and dressed with plain sugar paste flowers.

I also filled yellow treat cups with fresh fruit and blue treat cups (both from Shop Sweet Lulu) with Chex mix. A pretty little jar was filled with cute cupcake-shaped marshmallows that I found at Wal-Mart in the Easter candy section. A large jar was filled with containers of rainbow heart cookies that each guest took home.
I baked and (of course) frosted mini cakes for each guest to decorate as they wished. I baked the cookies in a small (4″) pan and frosted them in pink or purple vanilla frosting. I made some icing bags with different tips for the girls to use to decorate their cakes. I also supplied them with an assortment of candies, sprinkles, and decorations to add to their masterpieces.
The girls took turns decorating their cakes… while some decorated cakes, the other girls were in the kitchen making mini pizzas with my husband. Pizzas, along with fresh fruit cups, Chex Mix and juice, completed the simple but well-received menu.

I loved seeing all the finished cakes! Each of them were so different and also showed insight into their personalities =)
